High Protein Sweet Potato Mash
Grab a sweet potato and a carton of chickpeas (it’s easier than opening a can).
Pierce the sweet potato in several places. Microwave the sweet potato for several minutes, depending on size.
Slice it nearly open, and add a handful of chickpeas.
Do a quick mash with a fork. Dress it up with spices, salsa, or hot sauce.
Return to work in a good mood.
Save the rest of the chickpeas for tonight's chickpea soup, or for an after-school snack.
