5-minute Meatless Monday Lunch

How about a Meatless Monday, 5-minute workplace lunch? This quick and filling lunch is filled with iron and protein, even without the meat.

High Protein Sweet Potato Mash

  1. Grab a sweet potato and a carton of chickpeas (it’s easier than opening a can).

  2. Pierce the sweet potato in several places. Microwave the sweet potato for several minutes, depending on size.

  3. Slice it nearly open, and add a handful of chickpeas.

  4. Do a quick mash with a fork. Dress it up with spices, salsa, or hot sauce.

Return to work in a good mood.

Save the rest of the chickpeas for tonight's chickpea soup, or for an after-school snack.
