Add spice to your life

When roasting vegetables, put the fresh herbs underneath the vegetables so the herbs won’t burn. Here, I used rosemary.

Some vegetables release more nutrients when cooked. Roasting tomatoes caramelizes them, bringing out their sweetness and additional nutrients. Lycopene, which gives tomatoes their red color, may reduce the incidence of prostate, lung, and stomach cancer, described in this update on the health effects.
